Dr. Williams's research led her to a topic that has received growing attention in recent years: PFAS (per- and polyfluoroalkyl substances).
These synthetic chemicals have been used in a wide range of consumer products, including some types of nonstick cookware. They are valued for their resistance to water, grease, and stains. Because many PFAS compounds break down extremely slowly, they are often referred to as "forever chemicals."
“I started reviewing publicly available research and reports,” says Dr. Williams. “Again and again, I came across studies from universities, health agencies, and scientific organizations examining the presence of PFAS in the environment and in human populations.”
Scientists around the world have been studying PFAS for decades. Ongoing research continues to explore how long-term exposure to certain PFAS compounds may affect various aspects of human health.
As awareness of PFAS has grown, many consumers have begun taking a closer look at the materials used in everyday products—including the cookware they use in their kitchens.
